Having gotten back into making popovers has lead to remembering there is a variant that even easier; where you make them in a cast iron frying pan or dutch oven. It’s also pretty amazing as it comes out of the oven. Same recipe as popovers. We always called these David Eyre’s Pancakes when I was a kid. They it must be a very old dish with many names, for example Yorkshire Puddling, but my favorite is Dutch Baby.

I saw your idea, making it in a pan, I thought yeah that’s cool maybe I’ll try it. Then I thought, I don’t share my one popover that means I would have to share the big one and people eat faster than me meaning I would end up with less. LOL. Thanks for the idea.
You’ll be happier with the dutch baby, since you can chop out even slices for each diner. To get the same benefit with pop overs you need to parcel out the lot before anybody starts eating.
